The Cheese Market weekend ritual begins with wooden carts arriving at Waagplein around 7 a.m., laden with thousands of Gouda and Edam cheese wheels. The official Cheese Father calls to order, followed by the rhythmic chants and handhandclap bargaining known as handjeklap .
